In today post, I’m sharing with you my mom’s secret recipe of the Japanese Potato Salad. Japanese Potato Salad is an easy recipe that you can make as a side dish for lunch and picnic, or serve on bread and eat as a sandwich.

Ingredients

Japanese Potato Salad Ingredients
  • 2 Russet potatoes
  • 3 English cucumbers
  • 1/2 a Carrot
  • 1/2 cup of Corn
  • 1/2 cup of Canned diced pineapple
  • 1/2 cup of Diced apple
  • 1/3 cup of Japanese mayonnaise
  • 1/4 cup pf Green peas
  • 1 tbsp of Mustard
  • 1 Egg
  • Salt and Pepper

Unlike the western version, Japanese potato salad uses Japanese mayonnaise which is sweeter and creamier than the western mayonnaise. The Japanese mayonnaise brand that I always use is Kewpie. You can find the Japanese mayonnaise at Asian supermarkets or purchase it on Amazon.

Japanese Potato Salad

Japanese Potato Salad is an easy recipe that you can make as a side dish for lunch and picnic, or serve with bread as a sandwich.

Ingredients

  • 2 russet potatoes
  • 3 English cucumber
  • 1/2 carrot
  • 1/2 cup corn
  • 1/2 cup canned diced pineapple
  • 1/2 cup diced apple
  • 1/3 cup Japanese mayonnaise, Kewpie brand
  • 1/4 cup green peas
  • 1 tbsp mustard
  • egg
  • salt & pepper

Instructions

Prepare the Ingredients

  • 1)

    In a pot of water, boil an egg for 10 minutes. Peel the shell and cut into big chunks.

  • 2)

    Steam the potatoes for about half an hour. Use a bamboo stick to check the inside of potatoes. If the bamboo stick can easily poke through, the potatoes are ready. Peel of the skin.

  • 3)

    Peel the carrot and steam for 10 minutes. Chop the steamed carrot into small cubes.

  • 4)

    Thinly slice the cucumbers. Sprinkle with salt and mix well. Let the cucumber sit for 15 minutes. After 15 minutes, squeeze out the juice as much as possible.

  • 5)

    Peel the apple and cut into small cubes.

Combine the Ingredients

  • 1)

    Transfer potatoes into a mixing bowl. Cut into big chunks so you can smash them easily.

  • 2)

    Add corn, apple, carrot, pineapple, and green peas. Mix well.

  • 3)

    Add cucumber, Japanese mayonnaise, and mustard into the mixture. Mix everything together.

  • 4)

    Sprinkle with some salt and pepper to taste.

  • 5)

    Add the egg and mix one last time.

Notes

After adding the egg, taste the Japanese potato salad and add more mayonnaise, mustard or salt depending on your liking. You can serve Japanese potato salad as a side, or serve it on bread as a sandwich.
