Japanese Hand Roll: Asparagus Temaki

In this post, I will share with you a fun and easy Japanese recipe which can be served as a regular meal or at your next summer get-together with friends and family. It is the Japanese Hand Roll or Japanese Temaki.

Temaki is a type of Japanese hand roll sushi. It uses a piece of nori sheet and wraps different ingredients into a cone shape. In this recipe, I use shredded lettuce and asparagus with the special temaki sauce. I will share with you more Temaki recipes in the future.

Ingredients:

  • Asparagus
  • Shredded Lettuce
  • Nori sheets
  • Katsuobushi
Temaki Sauce:
  • 2 tbsp. of Japanese mayonnaise
  • 1 tsp. of ketchup
  • 2 tsp of wasabi

I love the pungent taste of wasabi so I use 2 teaspoons. In the temaki sauce, ketchup will add sweetness whereas wasabi adds the spicy and pungent flavor. Feel free to adjust the ratio depending on your liking.

Japanese Hand Roll: Asparagus Temaki

Temaki is a type of Japanese hand roll sushi. It uses a piece of nori sheet and wraps different ingredients into a cone shape. In this recipe, I use shredded lettuce and asparagus with the special temaki sauce.

Ingredients

Main Ingredients

  • asparagus
  • shredded lettuce
  • nori sheets
  • katsuoboshi

Temaki Sauce

  • 2 tbsp Japanese mayonnaise
  • 1 tsp ketchup
  • 2 tsp wasabi

Instructions

Prepare the Ingredients

  • 1)

    Break the tender part of the asparagus into about 2-1/2″ to 3″ long. To separate the tender part from the tough end, hold a spear of asparagus in your hands and gently bend it until it snaps off. Don’t use too much pressure.

  • 2)

    Blanch the asparagus in boiling water for 1 minute. Then, take them out and drop them immediately into ice water.

  • 3)

    Separate the lettuce leaves and soak them in ice water. Thinly shred the lettuce.

  • 4)

    Roast the nori sheets on the stovetop if yours aren’t crispy enough. Cut the sheets in half.

Make the Temaki Sauce

  • 1)

    Add 2 tbsp of Japanese mayonnaise with 1 tsp of ketchup and 2 tsp of wasabi. Mix them well.

Roll the Temaki

  • 1)

    Place shredded lettuce on 1/3 of the nori sheet to the left. Add 2 to 3 pieces of asparagus on the bed of lettuce, close to the top half of the nori sheet. Drizzle some temaki sauce and sprinkle some katsuobushi.

  • 2)

    Slowly and tightly roll the nori sheet from left to right.

Notes

For the Temaki Sauce, ketchup will add sweetness and wasabi will add the spicy or pungent flavor. If you can’t handle the pungent taste of wasabi, feel free to adjust to suit your liking.

Temaki tastes best when it’s freshly rolled. You can prepare plates of nori sheets, asparagus, shredded lettuce and temaki sauce on the dining table and let everyone help themselves with the hand roll.
