Three Cup Chicken is a popular stable dish in Taiwanese cuisine. In Taiwan, you can find it at the night market or any Taiwanese restaurant. However, Three Cup Chicken is an easy recipe and can be prepared at home

Three Cup Chicken got its name because, traditionally, 1 cups of an equal amount of rice wine, soy sauce, and sesame oil were used to make the sauce. But using 3 cups of each will be too salty. So the measurement has been adjusted based on the amount of chicken.
You can serve Three cup chicken with steam rice and veggie on the side because it is very savory and has strong flavor.
Ingredients

- 3 tablespoon black sesame oil
- 1/4 cup soy sauce
- 1/3 cup rice wine
- 1-1/2 tablespoon sugar
- 1 lb. chicken drumsticks & wing
- 2 cups Taiwanese basil
- 12 sliced ginger
- 8 garlic cloves
- 1 red pepper

I prefer using chicken wings and drums for this recipe because the bones give the dish more flavor. Chicken thigh can be used too.

This is black sesame oil which is roasted sesame oil and is more fragrant. It’s available at most Asian supermarket. You can use regular sesame oil if you can’t find this one.

I use Taiwanese rice wine but any cooking rice wine will work for this recipe.
Taiwanese Basil


A must-have ingredient in this recipe is basil, specifically Taiwanese basil. Unlike Italian basil, Taiwanese basil has more licorice and anise flavor. It also has jagged leaves and purple stems. Taiwanese basil can be found at many Asian supermarkets.
