Tomato Ohitashi トマトおひたし

Tomato Ohitashi トマトおひたし is an easy Japanese side dish. Peeled tomatoes are marinated in a mixture of dashi stock and soy sauce to absorb the umami flavor. It is a light and refreshing dish and it’s perfect for warmer seasons.

Ingredients

  • 15 cherry tomatoes
  • 1 1/4 cups of dashi
  • 2 tbsp. of mirin
  • 2 tbsp. of light color soy sauce
  • A pinch of salt
  • Bonito flakes (for garnish – optional)

Japanese Tomato Ohitashi

Ingredients

  • 15 cherry tomatoes
  • 1-1/4 cups dashi
  • 2 tbsp mirin
  • 2 tbsp light color soy sauce
  • salt
  • bonito flakes

Instructions

Prepare the Ingredients

  • 1)

    Rinse the tomatoes and slid a small cross on the bottom of each tomato. Don’t cut too deep.

  • 2)

    Blanch the tomatoes in a pot of boiling water for 8 to 10 seconds.

  • 3)

    After 8 to 10 seconds, take the tomatoes out and immediately put them in a bowl of ice water.

  • 4)

    When the tomatoes have cooled off, peel the skin.

Dashi Marinade

  • 1)

    In a glass container, mix 1 1/4 cups of dashi, 2 tbsp of light color soy sauce and 2 tbsp of mirin together.

  • 2)

    Sprinkle some salt to taste. Mix everything well.

Marinate Tomatoes

  • 1)

    Immerse the peeled tomatoes in dashi marinate overnight in the refrigerator. You can store tomato ohitashi for up to 3 or 4 days.

Serve

  • 1)

    Transfer the marinated tomatoes into a shallow bowl with some dashi mixture. Top with some bonito flakes.

Notes

Any tomatoes can be used for this recipe but the cherry tomatoes have the ideal size to absorb the dashi marinade quickly and deeply inside.
Blanching tomatoes in boiling water for 8 to 10 seconds will help the skin come off easily when you peel. Don’t boil them for too long because the tomatoes will start to disintegrate.
Besides bonito flakes, you can also use green onion or white sesame seed as the toppings.
