Taiwanese Rice Noodle Soup

Just like Taiwanese Fried Rice Noodle and Lu Rou Fan, Taiwanese Rice Noodle Soup is another signature Taiwanese dish that many Taiwanese families have their own version at home.

This recipe can also be made with cabbages instead of bean sprouts and pork belly or pork shoulder instead of pork sirloin for a tender and more moist texture.

Ingredients

  • 1/4 cup of julienne shallot
  • 1/4 cup of julienne shiitake mushroom
  • 1/4 lb of pork sirloin
  • 1 tsp of salt
  • 1 tbsp of vegetable oil
  • 1 tbsp of soy sauce
  • 2 stalks of green onion
  • Bean sprouts
  • 4 cups of water
  • Taiwanese rice noodle

To make an authentic Taiwanese rice noodle soup, make sure you get the skinny rice noodle from Taiwan.

I used pork sirloin for making a heart-healthy rice noodle soup. If you prefer tender juicy meat, please use either pork belly or pork shoulder. These meats are fattier. Therefore, they are more tender.

Taiwanese Rice Noodle Soup

  • Serves: 2 bowls

Ingredients

  • 1/4 cup julienne shallot
  • 1/4 cup julienne shiitake mushroom
  • 1/4 lb pork sirloin
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 2 stalks green onion
  • bean sprouts
  • 4 cups water
  • Taiwanese rice noodle

Instructions

Prepare the Ingredientd

  • 1)

    Soak shiitake mushrooms in water for at least 30 minutes. Then, squeeze out the juice. Thinly slice the mushroom.

  • 2)

    Peel off the skin and julienne the shallot

  • 3)

    With the green onion, cut it into shorter pieces, about 1 inch or 1 and ½ inches. Separate the white parts and the green parts. Smash the white parts with your knife and then cut in half lengthwise. Julienne the green parts

  • 4)

    Thinly sliced the pork sirloin. Cut against the grain.

  • 5)

    To prepare the rice noodle, first, bring a pot of water to a boil. When the water comes to a boil, add the rice noodle in and turn off the heat. Let the rice noodle sit in hot water for 5 minutes. After 5 minutes, drain out the water. With the scissors, cut the rice noodle following a plus sign so it’s easier to eat with chopsticks later.

Cook the Noodle Soup

  • 1)

    In a pan, add 1 tbsp of vegetable oil and sauté shallot on medium-high heat until the shallot is soft and fragrant.

  • 2)

    Add the shiitake mushroom and sauté together with the shallot.

  • 3)

    When the shallot and mushroom turn golden brown, pour in 1 tbsp of soy sauce. Stir well.

  • 4)

    Add the pork and sauté everything until the meat is no longer pink.

  • 5)

    Add the white parts of the green onion.

  • 6)

    Pour 4 cups of water in the pan. Give it a good stir, then increase the heat and bring everything to a boil.

  • 7)

    When the water starts to boil, add the rice noodle and let it cook it the soup for 1 minute. After 1 minute, move the noodle into your serving bowls.

  • 8)

    Add the bean sprouts into the soup and blanch for about 30 seconds. Take the bean sprouts out and place them in the noodle bowls.

  • 9)

    Pour 1 tsp of salt into the soup and add the remaining green parts of the green onion. Give the soup one last stir and turn off the heat.

Serve

  • 1)

    Pour the soup into 2 noodle bowls. Your Taiwanese rice noodle soup is now ready to be served. Enjoy!
